Trophy Brewing Company… Coming very soon

Several months ago during one of our frequent visits to Busy Bee, I learned that Chris and Woody were planning on expanding their empire by opening a brew pub.  Along with their co-conspirator, and long time home-brewer friend, Les Stewart, they set out to open Trophy Brewing Company.

We were fortunate enough to sample many of their “test” batches over the last few months, and I can say with complete honesty, that every single one I’ve tried has been amazing.  Thus, we were thrilled to be invited to the soft opening on Monday night.

FrontDoorThe brew pub is located on W Morgan St in the former Burger Hut location.  The bar area seems a little crowded right now, though that should be remedied soon once their expansion is complete (but more on that later).  We stepped inside and were greeted with an impressive mix of available beers.

Draft List

I grabbed a Limbo Champ (a brown ale), and the mrs grabbed The King (a Belgian Dubbel with Peanut Butter and bananas), and we headed back for a brief brewery tour.  Les quickly ran through their setup, sporting 6 fermenters (four 3 barrel tanks, and two 6 barrel tanks), which if my math is correct, gives them a capacity of 24 barrels, or 744 gallons, at any one time.

Naturally, everything is computer controlled through a Star Trek like control board that gives the kind of brewing control that a home-brewer dreams of.

After the brewing lesson, Chris gave us a quick walkthrough of the future pizza kitchen, and the 45 seat patio (hopefully opening in mid May).  The patio will be enclosable to be used in the winter as well.  We moved back into the bar, and sampled our way through the remainder of the draft list:

Trophy Wife (a Simcoe hopped pale ale), Best In Show (a citra hopped saison), Slingshot Coffee Porter (a coffee porter with local cold press coffee), and Biggest Flirt (a Belgian IPA w/ Nelson Sauvin hops)

We grabbed a 32 oz growler of Slingshot to take with us from their magical Growler filling machine, and headed out.

Their public opening is set for Wednesday, February 20th.  I highly recommend stopping by, this is the perfect place to start out an evening.  And once the kitchen is open, it may be the perfect place for an entire evening.
